Ingredients
- 8 fully ripe tomatoes
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 200 g pork belly (raw smoked in slices)
- 50 g tomato paste
- 1 tbsp paprika powder (sweet)
- 750 ml vegetable broth
- 3 sprigs thyme
- a pinch of sugar
- Sea salt
- pepper (ground fresh)
- thyme for garnish
Instructions

Wash the tomatoes, remove the stem ends, blanch them, peel and dice. Peel and finely dice the onion and garlic. Sauté both in hot olive oil until translucent. Cut the pork belly into strips and sauté briefly with them. Stir in the tomato paste, then add the diced tomatoes and vegetable broth to the pot. Add thyme and paprika powder as well, cover partially and simmer gently for about 30 minutes. Afterwards remove the thyme again and season with sugar, sea salt, and pepper.

Fill bowls or cups as desired and serve garnished with thyme leaves.
