Tomato Soup for Lovers

Ingredients

  • 600 g ripe tomatoes (e.g., cherry tomatoes)
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 2 tbsp Tomato paste
  • 1 tsp sugar
  • 800 ml broth (chicken, poultry or vegetable, as desired)
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp crème fraîche
  • basil (for garnish)

Instructions

    Quarter the washed tomatoes. Peel and finely chop the shallot and garlic. In a pot, sauté the shallot and garlic cubes in hot oil until translucent. Sprinkle with sugar and let lightly caramelize. Add the tomato paste briefly, then stir in the tomatoes and pour in the broth. Bring to a boil, cover, and simmer gently for about 15 minutes.

    Coarsely puree the soup, season with salt and pepper, divide into bowls, and draw a heart with crème fraîche on top. Garnish with basil and serve.
