Tomato Bread Soup

Ingredients
- 2 shallots
- 3 Garlic cloves
- 800 g ripe tomatoes
- 400 g white bread
- 40 g Butter
- 2 tbsp Tomato paste
- 1.25 l vegetable stock
- Salt
- Pepper (freshly ground)
- 1 tbsp dried oregano
Instructions

Peel and finely dice the shallots and garlic. Wash the tomatoes, remove the stem ends, blanch them, cool, peel, and cut into cubes. Cut the bread into cubes as well.

Heat butter in a pot and sauté the shallots and garlic for 1-2 minutes until translucent. Add the tomato cubes and tomato paste, then pour in wine (if used) and vegetable stock. Season with salt, pepper, and oregano, and simmer over medium heat for 25-30 minutes.

Stir the bread cubes into the soup and adjust seasoning. Ladle the soup into preheated bowls and serve sprinkled with freshly ground pepper.
