Ingredients
- 500 g sour cherries
- 1 piece untreated lemon
- 2 tbsp vanilla sugar
- 0.5 stick cinnamon
- 200 ml red wine (or currant juice)
- 75 g sugar
- 100 g almond kernels
- 400 g Greek yogurt

Wash and pit the cherries. Bring the lemon zest with the vanilla sugar, cinnamon stick, and red wine to a boil. Add the cherries and simmer for about 5 minutes. Remove from heat and let cool. Remove the lemon zest and cinnamon.

Caramelize the sugar in a non-stick pan until golden brown. Stir in the nuts until they are coated with caramel. Transfer to parchment paper and allow the almonds to cool closely together.

Distribute the compote into glasses, top with yogurt, and garnish with caramelized almond pieces before serving.
