Ingredients
- 500 g cherries
- 2 tbsp sugar
- 100 ml gooseberry juice
- 1 tbsp Lemon Juice
- 1 tsp Cornstarch
- 250 g quark
- 2 tbsp vanilla sugar
- 100 ml whipping cream
- 80 g whole grain biscuits

Wash, pit and drain the cherries. In a saucepan caramelize the sugar. Deglaze with gooseberry and lemon juice, whisk in the cornstarch (pre‑mixed with 1 tbsp water), bring to a boil and add the cherries. Set aside to cool.

For the cream, blend quark with sugar until smooth, fold in stiffly whipped cream. Crumble biscuits and layer them in four glasses. Spoon the cream over the crumbs, then top with the cooled cherry mixture.
