Ingredients

  • 1 cucumber
  • 300 g cherry tomatoes
  • 400 g feta
  • 0.5 bunch Parsley
  • 100 g black olives (more if desired)
  • 1 onion (blue)
  • 1 lemon (juiced)
  • 2 tbsp Red wine vinegar
  • 100 ml olive oil
  • Salt
  • Pepper

Instructions

    Halve the cucumber lengthwise and scrape out the seeds. Wash the tomatoes and let them drain. Peel and dice the onion, drain the feta and cut into cubes. Wash the parsley, shake dry, pluck the leaves and finely chop. Drain the olives well. Combine everything, lightly salt, and arrange on plates.

    For the vinaigrette mix lemon juice, vinegar, oil, and pepper together, taste, optionally add a bit more oil or water, fill small bowls, and pour over the salad before serving.
