Ingredients

  • 1 kg green asparagus (about 24 spears)
  • Salt
  • 0.5 bunch arugula
  • 4 ripe peaches
  • 1 tbsp butter
  • 5 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp finely chopped mint
  • black pepper (freshly ground)
  • 0.5 tsp Sugar

Instructions

    Wash the asparagus, peel the lower third, trim the woody ends and blanch the spears in boiling salted water for 10 minutes. Remove and drain. Wash, rinse, dry and spin the arugula. Wash, dry, halve the peaches and cut each half into wedges. Grill the wedges and halves in a hot skillet with melted butter until lightly browned on both sides.

    Whisk together olive oil, lemon juice, salt, pepper, sugar and mint leaves to make a vinaigrette. Arrange the asparagus spears crosswise on plates, place a half peach in the center of each spear, and arrange peach wedges around them. Garnish with arugula and drizzle with the vinaigrette before serving.
