Ingredients

  • 1 kg white cabbage (about 1 kg)
  • 200 ml white wine
  • 100 ml fish stock
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 8 herring fillets
  • 4 tbsp coarse mustard
  • 1 tbsp honey
  • 50 ml orange juice
  • 1 tsp dried thyme

    Preheat the oven to 180°C (356°F) with upper and lower heat. Wash, trim, and cut the white cabbage into fine strips or shave it. Distribute in four oven-safe bowls. Pour the white wine and fish stock over the cabbage and drizzle olive oil on top. Season with salt and pepper, then bake in the preheated oven for about 20 minutes, stirring several times during cooking. Add a little water if needed.

    Wash the herring fillets, pat dry, and cut them in half. Mix mustard with honey and orange juice. Remove the cabbage from the oven, sprinkle thyme on top, lightly season the fish fillets with salt and pepper, place them over the cabbage, and spread the mustard mixture over the fillets. Return to the oven and bake for another 10 minutes until done. Taste and serve.
