Ingredients

  • 300 g smoked herring fillet
  • 12 small firm-frying potatoes
  • 100 g red onions
  • 150 g mixed leafy salad
  • 300 g whipping cream
  • 3 tbsp olive oil
  • juice of one lemon
  • Salt
  • Pepper
  • 4 portion molds (10-12 cm diameter)
  • Chervil leaf (for garnish)

Instructions

    Peel the potatoes, boil in salted water for about 20 minutes, drain and let cool.

    Puree the herring fillets. Whip the cream until stiff peaks form and fold it into the herring puree. Fill the oiled molds, smooth the tops, and refrigerate.

    Wash, rinse, and dry the salad leaves. Tear smaller pieces if needed. Mix lemon juice, salt, pepper, and olive oil, then toss with the salad. Peel the onions, slice into rings, and add to the salad. Plate the salad and pour the herring cream over it. Slice the cooled potatoes and arrange them decoratively around the rim. Garnish with chervil and serve.
