Ingredients
- 600 g herring fillet
- Salt
- black pepper (freshly ground)
- 2 Eggs
- 2 tbsp coarse mustard
- 1 tbsp grated horseradish (fresh or jarred)
- 1 tbsp Cornstarch
- oil (for frying)
- flour (for coating)
Instructions

Wash the fish, pat dry and season with salt and pepper. Whisk the eggs with mustard, horseradish and cornstarch until well blended. Coat the fish strips in flour, tapping off excess.

Using a fork, press the egg mixture onto the coated strips; let them drain slightly and immediately fry in hot oil until golden brown. Drain on paper towels and serve immediately.
