Marinated Fried Herring with Ginger and Raisins

Ingredients
- 800 g green herring fillets (ready to cook, skin on)
- Salt
- black pepper (freshly ground)
- 150 g flour (for coating)
- 2 tbsp clarified butter
- 2 onions
- 3 cm fresh ginger
- 150 ml red wine vinegar
- 50 ml dry red wine
- 75 g raisins
- 1 vanilla pod

Wash the herring fillets, pat dry, season with salt and pepper, fold so the skin faces outward, secure with a toothpick, coat in flour, tap off excess, then fry in a hot pan with melted clarified butter until golden brown. Remove and place in a baking dish. Take out the toothpicks. Peel the onions and cut into rings.

Peel the ginger and slice into thick pieces. For the sauce bring about 400 ml water with vinegar and red wine to a boil, add the onions, ginger, raisins, and split vanilla pod lengthwise, simmer for 2-3 minutes, remove from heat and let cool. Pour the mixture over the fish (it should be covered) and refrigerate for 24 hours. Serve afterwards.
