Grapefruit Salad

This fruity, light grapefruit salad is a dream on warm days!
Ingredients
- 1 tbsp Lemon Juice
- 9 tbsp chopped mint
- 1 tbsp honey
- 1 tbsp Olive Oil
- a pinch salt
- a pinch pepper
- 1 large tomato
- 0.5 Avocado
- 500 g corn
- 1 grapefruit
- 50 g sheep cheese
Instructions

Whisk lemon juice with 4 tbsp chopped mint and honey in a bowl. Gradually stir in olive oil, then season with salt and pepper; whisk again.

Prepare the salad by peeling, washing, and chopping the tomato. Remove the pit from the avocado, loosen the flesh from the skin, and chop it. Combine both with corn in a bowl. Peel the grapefruit, remove all white membranes, cut into pieces, and add to the bowl with 4 tbsp chopped mint. Dice the sheep cheese and sprinkle over the salad.
