The granola bars from Spoonsparrow are packed with vital nutrients and make perfect brain food for stressful times.

Ingredients

  • 160 g mixed seeds (flaxseed, sunflower seeds, hemp seeds, pumpkin seeds)
  • 120 g almonds
  • 60 g pistachios
  • 60 g rolled oats
  • 40 g raisins (sugar‑free and sulfite‑free)
  • 40 g dried cranberries (sugar‑free and sulfite‑free)
  • 80 g maple syrup
  • 70 g almond butter
  • 50 g coconut oil
  • 30 g cacao nibs (3 tbsp)
  • 1 pinch salt

Instructions

    Chop seeds and nuts finely. Spread them with the oats on a baking sheet and roast in a preheated oven at 200 °C (180 °C fan‑forced; gas: level 3) for about 10 minutes. Remove from the oven and let cool for 10 minutes.

    Melt coconut oil in a small pot over low heat for 2 minutes. Add all ingredients to a bowl and mix well. Line a baking dish (25 × 35 cm) with parchment paper, pour the granola mixture into the dish and spread it evenly with a spoon.

    Cover the mass with cling film and press firmly into the dish with your hands. Place the dish in the freezer for 1 hour. After it has cooled and set, cut the mixture into bars and serve. Keep the bars fresh by storing them in the refrigerator or freezer.
