Gooseberry Crumble

Ingredients

  • 200 g Flour
  • 100 g ground hazelnuts
  • 125 g sugar
  • 1 packet vanilla sugar
  • 1 egg yolk
  • 150 g soft butter
  • 600 g green gooseberries
  • 2 tbsp icing sugar

Instructions

    Mix flour, hazelnuts, sugar and vanilla sugar. Knead the egg yolk and butter by hand until crumbs form.

    Place 2/3 of the crumbs in a pie tin and press firmly as a base. Chill.

    Wash, trim and pat dry the gooseberries on kitchen paper.

    Spread the gooseberries over the crumb base. Sprinkle 1 tbsp icing sugar on top. Distribute the remaining crumbs over the berries. Bake in an oven at 200°C for about 30 minutes. Serve sprinkled with leftover icing sugar.
