Ingredients

  • 150 g goat hard cheese
  • 12 medium wild garlic leaves
  • Salt
  • Pepper
  • 1 tbsp liquid honey
  • 1 tbsp Lemon Juice
  • 0.5 red bell pepper
  • 0.5 yellow bell pepper
  • 2 tbsp pine nuts
  • 1 tbsp Olive Oil

Instructions

    Wash the wild garlic, blanch in boiling salted water for 30 seconds, remove and let the leaves dry slightly on a kitchen towel. Peel both bell peppers and dice them.

    Toast the pine nuts in a non-stick pan without fat, remove and cool. Cut the cheese into six strips. Place two wild garlic leaves over each other and wrap one cheese strip inside. Grill under the oven broiler for 1-2 minutes until golden brown.

    Heat oil, sauté the bell peppers, season with salt and pepper. Add lemon juice and honey, stir in pine nuts, and plate. Arrange goat cheese rolls on top and drizzle with honey sauce from the peppers.
