Ingredients

  • 50 g banana chips
  • 70 g dried figs
  • 200 g honey
  • 140 g cane sugar
  • 100 g rolled oats
  • 2 tsp potassium carbonate
  • 0.5 tsp cinnamon
  • 220 g spelt flour
  • 1 tsp Weinstein baking powder
  • 3 tbsp liquid flower honey
  • 2 tbsp rolled oats
  • 60 whole, peeled almond kernels (or macadamia nuts; for decoration)

Instructions

    Add the banana chips to a blender with a blade and pulse until crushed. Remove the hard stems from the figs and chop the flesh into small pieces. Combine the honey and sugar in a pot, gently warm over low heat until the sugar dissolves. Add the rolled oats, banana chips, and figs, then simmer for 2-3 minutes.

    Set aside and let cool.

    Preheat the oven to 180 °C (350 °F) with upper and lower heat.

    Whisk the potassium carbonate into a small amount of water until smooth. Stir the flour with cinnamon, baking powder, and the potassium carbonate into the oat mixture. Transfer to a lightly floured surface and knead. Roll the dough to about 1 cm thickness and place on a parchment‑lined tray. Bake in the preheated oven for about 20 minutes. Warm the honey, cut the warm dough sheet into rectangles, brush with honey, and decorate with rolled oats and almonds or macadamia nuts. Cool completely and store dry.
