Ingredients

  • 4 slices dark bread (or whole grain toast)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic
  • 3 large tomatoes
  • 1 goat cheese
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash the tomatoes, halve them, remove seeds and dice. Peel the garlic and finely chop it. Mix tomatoes with olive oil, garlic, salt and pepper. Toast the bread until dark.

    Drizzle a little olive oil over the toast and season with salt. Quarter the goat cheese. Place one quarter of goat cheese on each slice of bread. Spoon 1-2 tbsp of tomato mixture over the cheese. Serve immediately. Optionally sprinkle more pepper on the toast.
