Ingredients
- 250 ml apple juice
- 100 ml apple cider vinegar
- 3 cloves of mace
- 1 cinnamon stick
- 1 tsp mustard seeds
- 5 tbsp cane sugar
- 4 firm pears
- 1 tsp grainy mustard
- 250 g goat cheese
- 2 tbsp liquid honey
- 2 tbsp chopped walnut kernels

Bring the apple juice and vinegar to a boil with cinnamon, mace, mustard seeds and sugar, then simmer for about 10 minutes. Peel, quarter, core the pears and cook them in the spiced syrup until just tender. Remove and set aside.

Reduce the syrup slightly until it becomes lightly thickened, remove from heat and stir in the mustard. Drizzle the pears with this sauce and let cool. Plate the pears, add goat cheese on top, drizzle with honey and sprinkle walnut kernels before serving.
