Ingredients
- 500 g goat fresh cheese
- 40 g chopped walnuts
- 2 tbsp chopped tarragon leaves
- 1 tbsp Lemon Juice
- Salt
- pepper (from grinder)
- 4 ripe tomatoes
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 3 tbsp finely sliced basil
- 2 onions
- oil for frying
- tarragon leaves for garnish

Mix the goat cheese with walnuts, chopped tarragon leaves, lemon juice, salt and pepper and season to taste. Wash the tomatoes, remove stems, blanch, peel, quarter, core and dice the flesh. Toss with balsamic vinegar, olive oil, a pinch of salt and pepper, then fold in finely sliced basil.

Peel the onions, slice into thin rings and fry in hot oil until golden brown. Remove and drain on paper towels. Divide the goat cheese into two portions, shape into round discs, place on plates and top with tomato cubes. Garnish with caramelized onion rings and tarragon leaves before serving.
