Goat Cheese Soufflé with Chives

Ingredients

  • butter (for the ramekins)
  • 4 eggs
  • 80 g Butter
  • 150 g goat fresh cheese
  • 2 tbsp chives
  • 2 tbsp crème fraîche
  • 2 tbsp flour
  • Salt
  • white pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 2 Spring Onions
  • 1 bunch arugula
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

    Grease the heat‑proof ramekins with butter. Preheat oven to 200°C (400°F) fan‑fry.

    Crumb the cheese. Whisk the butter with the yolks until fluffy. Alternately fold in cheese, chives and crème fraîche. Then fold in stiffly beaten egg whites and flour. Season with salt, pepper and nutmeg. Spoon the batter into ramekins and bake for about 15 minutes until golden brown.

    Wash, trim and slice spring onions into thin rings. Wash, rinse, dry arugula. Whisk oil with vinegar and season with salt and pepper.

    Remove soufflés from oven, release from ramekins, plate on a dish with arugula, onion rings and vinaigrette, then serve.
