Lemon Cookies

Ingredients

  • 200 g almonds (peeled)
  • 100 g powdered sugar
  • 150 g soft butter
  • 2 tbsp grated lemon zest (unprocessed)
  • 1 egg
  • 200 g Flour
  • 1 tbsp Lemon Juice
  • 3 small lemons (unprocessed)
  • sugar
  • 1 egg yolk

Instructions

    Grind almonds with powdered sugar in an electric food processor until fine. Beat butter, lemon zest and egg until fluffy; fold in almond-sugar mixture, flour and lemon juice. Shape dough into 2 logs (~5 cm diameter), wrap tightly in plastic wrap and chill for at least 3 hours.

    Cut logs into ~4 mm thick slices. Place dough circles on parchment-lined tray with space between them and brush with beaten egg yolk. Wash lemons hot, dry and cut very thin slices (equal to number of cookies). Top each cookie with lemon slice, sprinkle with sugar and bake in preheated oven at 180°C center for 12–15 minutes until golden yellow.
