Ingredients
- 600 g young, colorful beetroot
- 400 g goat cheese (roll)
- 4 tbsp apple cider vinegar (or white balsamic)
- 1 tsp liquid honey
- 2 tbsp lemon juice
- 5 tbsp Rapeseed Oil
- 1 pinch chili flakes
- pepper (ground)
- Salt
- basil (for garnish)
Instructions

Wash, peel and cut the beetroot into 2-3 mm thin slices or shavings.

Preheat the oven to grill mode.

Slice the goat cheese into about 4-5 mm thick rounds and place on a parchment-lined baking tray. Lightly brown both sides under the hot grill.

For the dressing combine vinegar with honey, lemon juice, oil, 2-3 tbsp cold water, chili flakes, pepper and salt in a glass jar, seal tightly, shake vigorously and taste.

Layer the cheese alternately with beetroot slices on plates and drizzle with the dressing. Serve garnished with basil.
