Ingredients

  • 1 package puff pastry (refrigerated)
  • legumes (for baking)
  • 2 onions
  • 2 tbsp butter
  • 1 tbsp powdered sugar
  • 2 tbsp balsamic vinegar
  • Salt
  • Pepper (freshly ground)
  • 2 egg yolks
  • 4 tbsp heavy cream
  • 100 g goat cheese
  • 3 tbsp chives

Instructions

    Cut 12 circles from the puff pastry using a round cutter. Grease a muffin tin and place the pastry rounds inside. Spread legumes on top of each pastry circle and blind bake for 5 minutes at 180°C in a preheated oven. Peel, halve, and finely dice the onions. Warm butter in a pan, sauté onions until translucent, sprinkle with powdered sugar, and caramelize. Deglaze with balsamic vinegar and season.

    Whisk egg yolks with heavy cream, adding a pinch of salt and pepper each. Remove legumes from blind baking. Place caramelized onions into the pastry circles, pour some of the egg‑cream mixture over them, and crumble goat cheese on top. Bake the tarts at 180°C for about 10 minutes until the yolk sets. Release the tarts from the tin, serve on a plate, and garnish with chives.
