Gazelle Horns
Gazelle horns are a classic pastry from North African cuisine. Try this delicious recipe from Spoonsparrow!
Ingredients
- 200 g butter (liquid)
- 500 g flour
- Salt
- 3 eggs (separated)
- 2 tbsp orange blossom
- 2 tbsp orange blossom water
- baking paper
- 1 orange (unprocessed)
- 500 g ground almonds
- 200 g powdered sugar
- 1 egg
- 1 tsp cinnamon
Instructions

Mix liquid butter with flour, salt, 2 yolks, orange blossom water and 60 ml water. Knead into a smooth dough and wrap in cling film to rest.

Wash the orange thoroughly, dry it, grate its peel thinly, and squeeze half of it. Combine the zest, almonds, powdered sugar, juice, egg, and cinnamon. Shape the filling into a long roll and cut into 50 equal pieces. Roll each piece into about 4 cm long ribbons.

Preheat the oven to 170°C fan. Line two baking trays with paper. Roll out the dough very thinly and cut 50 oval pieces about 8 cm long. Place filling in the center, brush edges with egg white, fold dough over, and shape into crescents. Arrange on trays and brush with remaining yolk.

Bake at 150°C for about 30 minutes until golden.

Sprinkle finished gazelle horns with powdered sugar and serve hot or cold.
