- 1 kg waxy potatoes
- 1 onion
- 1 tsp oil
- 100 g flour
- 2 Eggs
- 125 g quark
- Salt
- Pepper (freshly ground)

- 2 red-skinned apples
- 2 onions
- 1 tsp oil
- 1 bunch parsley
- 100 g grated Gouda

Wash potatoes, cover with water and cook for about 25 minutes. Drain, rinse, and peel. Peel onion, finely chop, sauté in oil. Pass potatoes through a potato masher and let cool. Mix flour, eggs, quark, onions, salt, and pepper into a smooth dough. Shape the dough into cups, pressing a hollow in the center.

Wash apples, peel, halve, core, dice. Peel onion, finely chop, briefly sauté in oil, add apple cubes, cook for 2 minutes. Fill the potato cup centers with this mixture. Place in a greased baking dish, sprinkle grated Gouda on top. Sprinkle chopped parsley over the cups and bake at 180°C (356°F) for 25 minutes.
