Ingredients

  • 40 g flour
  • 1 tsp butter
  • 3 eggs
  • 40 g sugar
  • 1 tsp grated lemon zest
  • 150 g Strawberries
  • 200 g peaches
  • 2 Kiwis
  • lemon balm leaf
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C (350°F) with both top and bottom heating.

    Separate the eggs; beat the egg whites with a pinch of salt until very stiff. Whisk the yolks with lemon zest, fold in the beaten whites, sift flour over the mixture, and gently fold everything together. Melt a little butter in a hot pan and cook four omelettes one after another: pour about 1/4 of the batter into the pan (you may need two pans), let it set briefly, then transfer to the preheated oven for 6–8 minutes until golden brown.

    Wash, peel if necessary, and chop the fruit. Arrange the cooked omelettes on a plate, top with the sliced fruit, fold them together, garnish with lemon balm leaves, and dust with powdered sugar before serving.
