Funny Monster Muffins
Funny Monster Muffins from ➸ Spoonsparrow are always really good.
Ingredients
- 200 g Flour
- 80 g ground almonds
- 1 packet baking powder
- 1 egg
- 120 g sugar
- a pinch of salt
- 1 Tbsp vanilla sugar
- 80 ml plant oil
- 250 ml buttermilk
- 150 g chocolate chips
- 80 g Butter
- 40 g sugar
- 100 g cream cheese
- 120 g powdered sugar
- blue food coloring
- 200 g coconut flakes
- 6 chocolate chip cookies
- 150 g marzipan base
- 50 g powdered sugar
- 24 small chocolate chips

Preheat the oven to 180°C (356°F) with upper and lower heat. Line the wells of a muffin tin with paper liners.

Mix the flour, almonds, and baking powder in a bowl. In another bowl whisk the egg with sugar, salt, vanilla sugar, oil, and buttermilk; add the dry mixture and stir just until the wet ingredients are incorporated. Fold in the chocolate chips. Fill the prepared wells and bake for about 25 minutes.

For the icing, beat butter with sugar until creamy, then fold in cream cheese. Gradually whisk in powdered sugar until a spreadable consistency forms. Color with blue food coloring. Also color the coconut flakes blue and place them on a plate.

Remove the baked muffins from the oven, let cool, release them from the tin, and cut a small slit in the center of each top. Spread the icing over the tops and sprinkle with the colored coconut flakes. Halve the cookies and insert one half into each slit.

Knead the marzipan with powdered sugar, form 24 small balls, and place them as eyes on the muffins. Use chocolate chips to create pupils.
