Ingredients
- 2 chicken breast fillets (cooked)
- 100 g Arugula
- 2 peaches
- 1 Shallot
- 40 g chopped almonds
- 2 tbsp white balsamic vinegar
- 2 tbsp thyme honey
- 5 tbsp olive oil
- Salt
- pepper (ground)
Instructions

Wash, rinse, and dry the arugula. Blanch the peaches, peel them, and cut into wedges. Slice the chicken meat.

Peel and finely chop the shallot. Whisk together vinegar, honey, oil, salt, and pepper, then stir in the shallots.

Combine peach, chicken, almonds, and vinaigrette; distribute over glasses or bowls and serve garnished with arugula.
