Arugula Mandarin Salad
A fresh arugula and mandarin salad featuring turkey breast slices, grapes, celery, and a creamy yogurt dressing from Spoonsparrow.
Ingredients
- 2 bunches arugula
- 4 mandarins
- 2 stalks celery
- 200 g green seedless grapes
- 300 g sliced turkey breast
- 4 slices Whole grain toast
- 2 tbsp butter
- 300 g plain yogurt
- 2 tbsp olive oil
- 3 tbsp orange juice
- 1 tbsp Lemon Juice
- 1 tsp liquid honey
- 1 tsp medium-hot mustard
- 2 tbsp freshly chopped parsley
- Salt
- pepper (ground)
Instructions

Wash, rinse, dry, and trim the arugula.

Peel the mandarins thoroughly, removing the white pith; slice the fruit into thin wedges and discard seeds.

Wash, trim, and slice the celery into thin strips. Wash the grapes, pat dry, and halve them.

Slice the turkey breast into thin strips.

Cube the toast as desired, then fry in a hot pan with melted butter until golden brown. Remove, drain on paper towels, and let cool. Mix the toasted cubes with mandarins, turkey, arugula, grapes, and celery; divide among bowls.

Whisk all dressing ingredients together and season with salt and pepper to taste.
