Poached Pears with Cheese Cream on Salad

Ingredients

  • 200 ml apple juice
  • 400 ml dry white wine
  • 2 EL sugar
  • 1 lemon (juice)
  • 4 small pears
  • 75 g blue‑veined cheese (e.g., Roquefort)
  • 75 g quark
  • 1 EL whipping cream
  • Salt
  • pepper (ground)
  • 100 g fresh cranberries
  • 1 EL maple syrup
  • a handful baby salad mix
  • 20 g walnut kernels

Instructions

    Bring the juice, wine, sugar and 3 EL lemon juice to a boil. Peel the pears, optionally leaving the stem on. Halve them, remove the core and place in the liquid. Boil once, simmer about 2 minutes, then remove from heat and let steep for another ~10 minutes. Remove the pears, drain well and reserve the poaching liquid.

    Crush the cheese with a fork and mix with quark and cream. Season with salt, pepper and a splash of lemon juice.

    Wash the cranberries and gently simmer them in about 100 ml of the pear poaching liquid for ~10 minutes. Finish with maple syrup and remove from heat.

    Wash the salad, shake dry and spread on plates. Slice walnuts into strips. Spoon about 1 EL cheese cream into each pear, place on the salad, sprinkle with walnuts, scatter some cranberries with sauce around, and serve.
