Arugula Mushroom Salad

Ingredients

  • 1 small red onion
  • 150 g small mushrooms
  • 4 dried tomatoes (in oil)
  • 1 handful blood orange leaves
  • 1 handful baby spinach
  • 1 handful red Lollo Rosso
  • 100 g Arugula
  • 2 tbsp walnut oil
  • 4 tbsp sherry vinegar
  • 1 tbsp Lemon Juice
  • 0.5 tsp medium-hot mustard
  • 1 tsp maple syrup
  • Salt
  • Pepper (freshly ground)
  • 30 g Parmesan

Instructions

    Peel the onion and slice into thin strips.

    Clean the mushrooms and cut them into thin slices.

  3. 3.

    Drain the tomatoes and cut into strips.

  4. 4.

    Wash and dry the blood orange leaves, spinach, Lollo Rosso and arugula; shake or spin dry.

  5. 5.

    In a jar combine walnut oil, 2 tbsp tomato oil, sherry vinegar, lemon juice, mustard and maple syrup. Add salt and pepper, seal and shake vigorously.

    Toss the salad greens with mushrooms, tomatoes and onion in a large bowl with the dressing.

    Grate parmesan over the top and serve.
