Fruitful Potato Salad

Ingredients

  • 800 g waxy potatoes
  • Salt
  • 250 g plum fruit
  • 1 Red Onion
  • 1 handful of germander
  • 100 ml sea buckthorn juice
  • 2 tbsp honey
  • 1 tsp sharp mustard
  • 5 tbsp Rapeseed Oil

Instructions

    Peel, wash and cut the potatoes into bite-sized pieces. Boil in salted water for about 15 minutes until cooked. Then drain and let cool to lukewarm.

    Wash, pit and slice the plums into wedges. Peel, halve and thinly slice the onion. Rinse the germander, remove stems and chop the leaves. Set aside a few leaves for garnish.

    For the dressing whisk the juice with 3-4 tbsp water, honey, mustard and oil, then season with salt to taste.

    Arrange the potatoes with plums and onion on plates, pour the dressing over them, sprinkle with germander and serve garnished.
