Fruitful Marzipan Muffins

Ingredients

  • 260 g flour
  • 2.5 tsp baking powder
  • 0.5 tsp Baking soda
  • 50 g chopped almonds
  • 1 egg
  • 80 g cane sugar
  • 1 packet vanilla sugar
  • 80 ml plant oil
  • 250 g buttermilk
  • 12 tsp raspberry jam
  • 120 g marzipan base

Instructions

    Grease the muffin tin cavities. In a bowl mix flour, baking powder, baking soda and almonds. In another bowl lightly whisk the egg and stir in sugar, oil and buttermilk.

    Quickly combine with dry ingredients until moist.

    Shape 12 small balls from the marzipan base.

    Fill half of each cavity with batter. Place one teaspoon of raspberry jam and a marzipan ball on top, then cover with remaining batter. Bake in preheated oven at 180°C (mid) for 20–25 minutes. Let muffins rest in tin for 5 minutes before removing from molds and serving.
