Fresh fruit skewers served with a creamy coconut yogurt dip – a vibrant alternative to traditional fruit salad.

Ingredients

  • 0.5 lemon
  • 4 tbsp shredded coconut
  • 200 g plain yogurt (0.3% fat)
  • 2 tbsp Maple syrup
  • 1 kg seasonal fruit (e.g., apples, melon, pineapple, nectarines, etc.)
  • a few mint leaves for garnish

Instructions

    Squeeze the juice of one lemon.

  2. 2.

    Roast the shredded coconut in a dry skillet over low heat for about 7–8 minutes until golden brown; let cool on a plate.

    In a bowl whisk together half the roasted coconut, yogurt, 2 tsp lemon juice and maple syrup.

  4. 4.

    Wash, peel if desired, and cut the fruit into bite‑sized pieces.

  5. 5.

    Thread the fruit onto wooden skewers in an attractive pattern.

  6. 6.

    Sprinkle the remaining roasted coconut over the skewers and serve immediately with the yogurt dip and a few mint leaves for garnish.
