Asparagus Omelette

Ingredients

  • 5 stalks asparagus
  • Salt
  • 1 pinch sugar
  • 4 Spring Onions
  • 1 Garlic clove
  • 2 tbsp butter
  • 5 eggs
  • 2 tbsp crème fraîche
  • Pepper (freshly ground)
  • nutmeg
  • 2 tbsp freshly grated Parmesan

Instructions

    Preheat the oven to 200°C fan.

    Peel the lower third of the asparagus and cook the stalks in salted water with sugar for about 10 minutes until firm. Wash, trim and slice the spring onions into rings. Peel and finely chop the garlic; sauté it with the spring onions in hot butter for 1-2 minutes. Beat the eggs with crème fraîche and season with salt, pepper and nutmeg. Pour over the spring onions and arrange the asparagus sticks on top. Sprinkle the omelette with cheese and bake in the oven for 10‑15 minutes until golden brown.
