Ingredients

  • 1 kg apricots
  • 300 ml wine vinegar
  • 100 ml alcohol‑free rum (alternatively orange juice with a splash of rum flavor)
  • 200 g sugar
  • 1 vanilla pod
  • 1 star anise
  • 0.5 tsp cardamom pods
  • 0.5 tsp cloves
  • 1 cinnamon stick

Instructions

    Heat the apricots in boiling water, then cool and peel them.

    Bring vinegar, rum, 200 ml water, sugar, vanilla pod, star anise, cardamom, cloves, and cinnamon to a boil; add the apricots and simmer again. Transfer to prepared jars, seal tightly, and let steep for at least two weeks before use.
