Ingredients
- 1 kg apricots
- 300 ml wine vinegar
- 100 ml alcohol‑free rum (alternatively orange juice with a splash of rum flavor)
- 200 g sugar
- 1 vanilla pod
- 1 star anise
- 0.5 tsp cardamom pods
- 0.5 tsp cloves
- 1 cinnamon stick

Heat the apricots in boiling water, then cool and peel them.

Bring vinegar, rum, 200 ml water, sugar, vanilla pod, star anise, cardamom, cloves, and cinnamon to a boil; add the apricots and simmer again. Transfer to prepared jars, seal tightly, and let steep for at least two weeks before use.
