Ingredients

  • 8 slices ciabatta
  • 0.25 melon (e.g., Cantaloupe)
  • 1 Lime (juice)
  • 1 tbsp liquid honey
  • 0.5 tsp Szechuan pepper
  • 1 tsp Pink peppercorns
  • 250 g raspberries
  • 2 stems basil
  • 200 g cream cheese (with yogurt)

Instructions

    Preheat the oven to grill mode.

    Place the bread on the grill rack and toast both sides until crisp in the oven. Remove from the oven and let cool briefly.

    Peel the melon, remove seeds, and cut flesh into pieces. Mix lime juice with honey and stir in melon pieces with Szechuan pepper and pink peppercorns. Toss raspberries lightly. Rinse basil, shake dry, pluck leaves, and roughly chop.

    Spread cream cheese on bread slices. Top with melon, scatter raspberries, and sprinkle basil before serving.
