Fruit Cake with Almonds

Ingredients
- 1 apple
- 200 g sultanas
- 125 g currants
- 100 g chopped raisins
- 40 ml apple juice
- 1 tsp grated lemon zest
- 1 tsp grated orange zest
- 150 g butter
- 50 g rice syrup
- 3 eggs
- 200 g Spelt flour Type 1050
- 0.5 tsp Baking powder
- 75 g ground almonds (ground)
- 100 ml milk (3.5% fat)
- 75 g peeled almond kernels

Peel, wash, and finely grate the apple. In a bowl combine sultanas, currants, apple zest, apple juice, raisins, and grated citrus zest.

Beat butter and rice syrup with an electric mixer until fluffy. Gradually add eggs one at a time, beating well after each addition. Pour this mixture into the fruit bowl.

Sift flour and baking powder over the fruits and airy mixture; add ground almonds and milk. Stir all ingredients with a spoon until smooth, adding more or less milk if needed.

Transfer the batter to a parchment-lined pan and spread evenly. Decoratively arrange the peeled almond kernels on top of the cake surface.

Bake in a preheated oven at 160 °C (140 °C fan; gas: level 2) for about 60–80 minutes, checking with a skewer. If the cake darkens too much, cover it with foil. Let the cake rest in the pan for about 20 minutes, then cool on a wire rack.
