Almond Fruit Cake
This is the delicious almond fruit cake from Spoonsparrow.
Ingredients
- 1 Organic Orange
- 250 g soft butter
- 70 g raw cane sugar
- 1 pinch vanilla
- 4 eggs
- 350 g wheat flour type 1050
- 150 g ground almonds (peeled)
- 1 tsp Baking powder
- 150 g cranberries
- 100 g dried figs

Wash the orange hot, dry it, grate the peel and squeeze out the juice.

Beat the butter with a mixer until fluffy. Gradually add raw cane sugar and vanilla while stirring until smooth. Beat in the eggs one at a time, mixing well after each addition. Whisk everything very light and airy. Mix the flour with almonds, baking powder and orange zest. Add the dry mixture to the butter batter and fold in the orange juice quickly.

Rinse the cranberries and pat them dry. Chop the figs and fold them into the dough along with the berries. Pour the batter into a pan lined with parchment paper, smooth the top, and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 45 minutes or until a skewer comes out clean.

Let the cake cool briefly in the pan, then transfer it to a wire rack to finish cooling.
