Mango and Strawberry Sorbet

Ingredients
- 500 g strawberries
- 0.25 l sparkling wine
- 4 large beautiful strawberries
- strawberry leaves
- 1 Lime
- 100 g sugar
- 100 ml water
- 100 ml dry sparkling wine
- 400 g mango flesh
- Lemon balm
Instructions

Wash the strawberries and finely puree them in a blender.

Combine the puree with the sparkling wine and freeze it in a shallow metal bowl or a sorbet maker, stirring well with a fork every 30 minutes.

Remove the sorbet from the freezer and serve it in chilled stem glasses.

Wash, peel, and juice the lime.

Add sugar, lime zest and juice, and water to a pot; bring to a boil while stirring, then simmer for about 3 minutes. Strain and top up with sparkling wine.

Break the mango flesh into pieces and puree it with the sugar-water mixture until smooth.

Pour everything into a shallow metal bowl, place it in the freezer, and freeze, stirring well with a fork every 30 minutes.

Serve the sorbet in chilled glasses.
