Fruit Bread with Bananas
Juicy, sweet and fruity at the same time, the fruit bread with bananas from Spoonsparrow is a delight for on-the-go enjoyment.
Ingredients
- 100 g mixed dried fruit
- 50 g peeled whole hazelnuts
- 50 g peeled whole almonds
- 250 g butter
- 200 g brown sugar
- 1 tbsp beetroot syrup
- 4 eggs
- Salt
- 400 g flour
- 1 pinch Cinnamon powder
- 1 pinch clove powder
- 1 pinch Cardamom
- 1 packet baking powder
- 100 g ground walnuts
- 150 ml milk
- 2 Bananas
- flour (for dusting)
- butter (for the pan)
Instructions

Soak the dried fruit in rum. Toast the nuts and almonds in a hot pan without oil, then remove and let cool.

Preheat the oven to 180°C with upper and lower heat.

Beat butter with sugar and syrup until creamy, gradually add eggs with a pinch of salt. Mix flour with spices, baking powder, and ground walnuts; alternate adding milk and this dry mix into the butter mixture. Peel bananas, mash with a fork, and fold into the batter. Lightly dust the drained dried fruit and nuts with flour before folding them in.

Pour the batter into a greased loaf pan, smooth the top, and bake for about 1 hour in the preheated oven; test with a toothpick.

Remove the finished banana fruit bread from the oven, let it cool briefly, release from the pan, slice, and serve.
