Ingredients

  • 1 stalk sage
  • 1 stalk basil
  • 1 stalk Parsley
  • 1 stalk chervil
  • 2 lavender buds
  • 1 stalk lavender (leaves)
  • 1 stalk Parsley
  • 1 stalk lemon balm
  • 2 clover leaves
  • 1 stalk wild thyme (with flowers)
  • spring onion flower (optional)

Instructions

    Wash the herbs, pluck the small leaves or flowers and place 1-3 per ice cube tray cell, allowing some to overhang.

    Fill halfway with water and freeze; after about 1-2 hours pour in ice‑cold water and let freeze completely.

    Remove the herb cubes from the trays and use as desired, e.g., to garnish chilled summer soups or other dishes.
