Frikadellen with Potatoes

- 500 g mixed ground meat
- 1 stale roll
- 1 onion
- 1 Garlic clove
- 1 small zucchini
- 1 red bell pepper
- 2 carrots
- 1 egg
- 2 sprigs thyme
- Salt
- Pepper
- 3 tbsp clarified butter
- 4 large firm potatoes
- 300 g crème fraîche
- 1 bunch chives

Wash the potatoes thoroughly and wrap them tightly in aluminum foil. Bake in a preheated oven at 175°C for 50 minutes. Soak the stale roll in lukewarm water. Peel and finely chop the onion and garlic. Halve the bell pepper, remove seeds, wash, and dice finely. Wash zucchini and carrots, trim ends, and dice finely.

Squeeze out excess liquid from the soaked roll, then mix with egg, ground meat, and half of the diced vegetables. Season with salt, pepper, and thyme leaves. Shape the mixture into eight patties. Heat clarified butter in a pan, add remaining diced vegetables, and brown the patties on each side for 7 minutes.

Wash chives and cut into fine ribbons. Stir them into the crème fraîche along with salt and pepper. Remove potatoes from foil, slice crosswise, and serve the patties with the sliced potatoes and creamy dip.
