Doughnuts

Ingredients
- 42 g yeast
- 170 ml milk
- 500 g flour
- 2 Eggs
- 2 egg yolks
- 40 g sugar
- 60 g Butter
- Salt
- 0.5 vanilla pod (aroma)
- 1 l frying oil
- 300 g apricot jam
- 100 g sugar (for dusting)

Warm 100 ml milk, crumble the yeast into it and dissolve. Mix with 150 g flour to make a pre-dough, dust with a little flour and let rise covered for 20 minutes. Beat eggs, yolks and sugar with an electric mixer. From the pre-dough, remaining milk, remaining flour and the egg-sugar mixture knead a dough. Knead in butter, a pinch of salt and vanilla aroma. Let rise covered at room temperature for 30 minutes.

Punch out 20 dough balls with a tablespoon, shape into round spheres and place on a lightly floured cloth. Press slightly flat with your fist and cover with a cloth. Let rise again until the volume has increased by three quarters.

Heat frying fat to 170 °C and fry the doughnuts in batches for 2 minutes, flip and fry another 2 minutes. The doughnuts are nicely cooked when they have a white ring around the center. Place finished doughnuts on kitchen paper and immediately pipe apricot jam into them with a pastry bag and long tip. Then roll warm doughnuts in sugar.
