Ingredients
- 700 g fresh sweet cherries
- 3 eggs
- 150 g flour
- 175 ml dry white wine (replace with beer if desired)
- 3 tbsp oil
- 1 vanilla bean (pulp)
- 1 tsp grated lemon zest
- a pinch of salt
- 2 tbsp sugar
- 750 ml fat for frying
- powdered sugar for dusting

Wash the cherries and drain well.

Separate the eggs. Mix flour, wine, oil, egg yolks, vanilla pulp, and lemon zest to make the dough. Whisk the egg whites with salt and 2 tbsp sugar until stiff peaks form, then fold gently into the dough.

Heat the frying fat to 160°C. Pass each cherry through the dough and fry in hot fat until golden brown. Remove and drain on kitchen paper. Dust with powdered sugar before serving.
