Strauben

Ingredients
- 125 ml milk
- 80 g Butter
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 160 g flour
- 5 eggs
- 750 g clarified butter (for frying)
- 4 tbsp powdered sugar (for dusting)

Heat 125 ml water with the milk, butter, salt and sugar and bring to a boil once. Add the flour and stir carefully. Continue cooking the dough over low heat until it forms a lump. Transfer this to a bowl and gradually whisk in the eggs until the dough is very smooth.

Cut paper into 10 cm squares and brush them with butter. Fill a pastry bag fitted with a large star tip with the dough and spray rings onto the paper pieces.

Heat clarified butter in a deep fryer or pot at 180°C (or until bubbles form on a wooden stick). Turn the paper pieces over and hold them above the hot fat, letting the rings slide in. Fry each portion for about 4 minutes per side until golden yellow. Remove individually with a slotted spoon and drain on kitchen paper. Dust heavily with powdered sugar before serving.
