Ingredients
- 1 kg small stint (prepped, gutted, and scaled)
- Salt
- Pepper (freshly ground)
- flour (for dusting)
- 2 Eggs
- 75 g flour
- 75 g finely chopped walnuts
- 1 l oil

Heat oil in a deep fryer or pot to 180°C; test by dropping a wooden spoon handle into the oil, small bubbles should rise.

Wash and pat fish dry. Season with salt and pepper, then dust with flour. Whisk eggs in a shallow dish. Mix flour and walnuts on a flat plate. Dip floured fish first in egg, then roll in walnut mixture. Fry portions in hot oil for about 5 minutes until golden brown. Keep warm in the oven.

Serve fried stint over mango or orange slices as desired.
