Fried sardines

Ingredients

  • 600 g fresh sardines (ready to cook)
  • Salt
  • Pepper (freshly ground)
  • flour (for coating)
  • vegetable oil (for frying)
  • lemon wedges

Instructions

    Peel the sardines, rinse and pat dry.

  2. 2.

    Heat the oil in a deep wide pot. The right temperature is when small bubbles rise at the tip of a wooden spoon held in it.

  3. 3.

    Season the sardines with salt and pepper, coat them in flour, tapping off excess flour.

  4. 4.

    Fry the sardines in batches for about 2 minutes each side until golden brown, turning during cooking.

  5. 5.

    Keep the fried sardines warm on a parchment-lined tray in an oven at about 50 °C. Serve hot with lemon wedges.
