Fried Cheese Balls

Ingredients

  • 250 g old-fashioned toast bread
  • 2 handfuls mint (ca. 50 g)
  • 3 eggs
  • 150 g freshly grated Parmesan
  • 150 g sheep cheese
  • Salt
  • Pepper (freshly ground)
  • vegetable oil (for frying)

Instructions

    Drain the toast bread, roughly cube it and soak in lukewarm water for about 15 minutes. Then squeeze out excess liquid and crumble. Wash, dry, and finely chop the mint. Mix the mint with the eggs and Parmesan into the crumbled bread. Drain the sheep cheese, coarsely crumble it, add to the mixture, and season with salt and pepper. Cover and refrigerate for at least 3 hours.

    Shape small balls from the mixture and fry portions in hot oil for 3-4 minutes until golden brown. Drain on kitchen paper and serve.
