Potatoes with Quark

Ingredients
- 1 kg potatoes
- 1 tsp Caraway seeds
- 500 g Low-fat quark
- 3 tbsp milk (1.5%)
- Salt
- Pepper (freshly ground)
- a pinch paprika powder
- a pinch caraway powder
- 1 onion
- 1 bunch chives
- 4 tbsp flaxseed oil
- butter (optional)
Instructions

Wash the potatoes and cook them covered in salted water with caraway seeds for about 25 minutes.

Whisk the quark with milk until smooth, then season with salt, pepper, paprika and caraway.

Peel and finely chop the onion; wash and cut the chives into small rolls. Place both in a bowl.

Drain the cooked potatoes, let them steam dry, then peel. Arrange portions of quark with the potatoes on plates, drizzle with flaxseed oil. Serve with chopped onions, chive rolls and optional butter pieces.
